Loving Your Leftovers

We’ve been on lockdown now for a week and some may be finding that those extra items that we bought ’just in case’ are still sitting in the fruit bowl or on the bottom shelf of the fridge and thought that there’s one thing that we’ve got more of than usual……time, now is as good a time as any to learn new cooking skills and stop that browning banana being thrown in the bin!!

I’ve written below a few simple recipes to try:

Vegetable Soup Half fill a pan with water and add 2 chicken stock cubes. Finely chop celery, 2 onions, 2 large carrots and 4 leeks. Add the vegetables to the stock and bring to the boil. Reduce heat and simmer for 30 minutes. Season. Cool slightly then blend until smooth and thick. Serve on own or with a chunk of bread.


Banana Muffins 2 large bananas, mashed 85g sugar (brown ideal but not essential) 4 tablespoon sunflower oil 1 egg 150ml milk 200g self- raising flour ½ teaspoon nutmeg Preheat oven 190 degrees, Mix bananas with oil and sugar. Beat in egg and milk. Fold in flour. Spoon into muffin tins. Bake 15-20 minutes.


Fruit Shake 1 banana (sliced) Handful strawberries (can be fresh or frozen) 1 pot strawberry yogurt Milk Pop all in blender and the serve
